National Day 2007




 

Racial Harmony Day

Racial Harmony Day is a day where all children will dressed in their traditional clothing and attended school. This is the first time my younger son attending such an event in school. He was quite excited.

Repaired Camera

It has been awhile that i never upload pictures to my blog because my digital my camera brokedown.

I broke the LCD screen on my trip to Malaysia.  As my camera is still under warranty so i sent it to the Service Centre for repair.   Initially, the Service Centre said that it took 2 weeks to repair and will cost less than $50.

However, 2 weeks past, the Technician called up and said that the centre ran out of spare parts. He needed another 2-3 weeks to import the parts and the repari cost increased to double of what they had initially quoted. When I reasoned this with him, he sounded unfriendly and insisted that if I can't afford to wait, get another new camera.  Since I had waited for 2 weeks, another 3 weeks doesn't make any different. So I decided to go ahead with the Repair.

Another 3 weeks past and yet any repair work had been done to my camera . My Hubby was so angry that he lodged a complaint to the Superior and the next day we got our camera repaired.

We were quite disappointed to the Centre for taking such a long time to repair the damaged LCD screen.

Gyoza

Gyoza is a dumpling. It can be steamed or fried. Fried gyoza is best serve with mayonnaise while the steam one is best served with black vinegar and ginger strip.
Ingredients
1 cup chopped cabbage
1 tablespoon chopped onion
100g mince pork
1 tablespoon sesame oil
1 tablespoon sugar
2 tablespoon soya sauce
1 tablespoon salt
gyoza wrapper

Methods
1 Combine all ingredients and mix well.
2. Place a teaspoon of filling on gyoza wrapper.
3. Place water on the edge of wrapper and seal it.
4. Heat some oil in a pan and put in gyoza and fry on high heat.
5. Turn to low heat and add in water.
6. Cover the pan and steam the gyoza till water is gone.

Agedashi Dofu

Agedashi Dofu is deep fried tofu. Tofu is made from soya bean and is very nutrious.
Ingredients
2 tofu block
1 cup dashi stock
1 tablespoon soya sauce
1 tablespoon mirin
2 tablespoon corn flour/potato starch
1 tablespoon water

Methods
1. Put dashi stock, soya sauce and mirin in a pan and brin it to boil, add in corn flour mixture and stir well.
2. Wrap tofu in paper towel and remove excess water. Cut into cube and dust it with corn flour.
3.Fry tofu till golden and drain off excess oil. Place fried tofu in a plate and pour sauce over it.

Tonkatsu (Pork Cutlet)




My Hubby loves to eat this dish. It is pork cutlet in Western Cuisine.

Ingredients
2 pork chop
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup corn flour
1 egg
1 cup bread crumbs

Methods
1. Sprinkle pork chop with salt and pepper.
2. Lightly tap the pork chop with corn flour and dip it into egg mixture.
3. Put bread crumb on the pork chop an pat it well.
4. Deep fried the pork chop till golden brown.
5. Take them out and drain the oil on a paper towel.

Japanese Cuisine

Whenever I ask my boys what he wants for lunch/dinner.  They will simply reply....  either MacDonald Value Meal or Japanese Food.

They love to eat the Cold noodle.  This is how i prepared it.

Cold Somen
Ingredient
1 pack Dried somen noodle
2 cup dashi soup stock
1 cup soya sauce
1 cup mirin
Seaweed Cut into thin strip
Spring onion

Method
(Dipping Sauce) -
1. Put mirin in a sauce pan and heat, Add in soya sauce and dashi stock.
2. Bring it to boil and let it cool till room temperature.
3. Once sauce is cooled, put in cup.
To make it simple, just get a bottle of this sauce from Daiso and mixed with cold water.


(Cold Somen noodle)
1. Boil water ina large pot and ad somen noodle.
2. Gently stir somen. Drain somen and rinse with cold water.
3. Placed the cold somen in a large serving plate and top it with seaweed strip and spring onion.

Tom Yam Soup

Ingredients
100g tom yam paste
250g prawn
90g Thai fish sauce
100g button mushroom
150g lemon juice
10g lemon leave
5g lemongrass
20g chili padi
250g Chicken stock

Methods
1.Pour in chicken stock in a pot. Add prawn and bring to boil.
2. Add in all ingredients and mixed well.

Green Curry Chicken

Ingredients
100g chicken
Green curry paste
50g long bean
10g binjo
200ml coconut milk
50g chili
500ml chicken stock

Methods
1. Fried long bean, binjo till fragrant.
2. add green curry paste and coconut milk in a wok and fried till fragrant.
3. Add in chicken and bring to boil. Add in fried vegetable.
4. Add in chicken stock, salt and sugar.

Thai Cuisine

Water Chestnut In Coconut Milk (Red Ruby)

Ingredients
60g water chestnut
200ml Coconut milk
1 teaspoon green colour food dye
1 teaspoon red colour food dye
50g sugar
2 tablespoon corn flour

Methods
1. Wash and peel off skin of water chestnut. Diced it and mixed with red/green colour food dye and let it set for a day.
2. Mixed the dyed water chestnut with corn flour and bring it to boil.
3. Scope the boiled water chestnut and placed them in ice water for a minute.
4. Drain dry and put them in a glass. Add coconut milk with sugar and serve with some crush ice.

Pineapple Rice

Ingredients
200g cooked rice
50g prawn
10g raisin
30g pineapple chunk
10g onion
5g curry powder
5g turmeric powder
50g chicken fillet
2 eggs
2 teaspoon tomato ketchup

Method
1. Fried the prawn in oil till golden.
2. Cooked eggs in a wok. Add rice, curry and turmeric powder, raisin, pineapple and onion4. and fried it till fragrant.
3. Add salt and sugar to taste. Put in prawn and tomato sauce.
4. Top it with pork/chicken floss and serve.

Tiger Airways (Budget Airline)


Times Flies. 3 years ago,  when Tiger Airline first launched their Flight to Thailand at promotion price of S$1.00(One-way), we managed to get it.  This was my first time taking budget flight. It was quite special as no seat was allocated (Free-seating). As priority were given to children and elderly to board the plane, we managed to grap the first row in the cabin.   It was the first time my elder son go onboarded and he was so excited. As For my hubby, this was his first trip to Bangkok. We went to a few places like Chao Phyao River, Four Faced Buddha, MBK, Isetan and others. We even try Bangkok Train System to avoid Traffic Congestion.

Chilli Sambal

Ingredients
4 shallot, chopped
4 chili, chopped
2 cloves garlic
4 candle nuts
1 teaspoon shrimp paste
1-1/2 tablespoon oil
1 tablespoon tamarind concentrate
1 tablespoon palm sugar

Method
Crush shallot, chillies, garlic, candle nuts and shrimp paste with oil in a mortar with pestle or a food processor until smooth. Heat oil in a pan or wok, add paste and stir fry for 5 minutes. Add tamarind and sugar. Place paste in an container and let it cooled off.

Basic Spice Paste (Sambal)

Ingredients
4 shallots, chopped
6 red chili
2 cloves garlic
2 teaspoons fresh ginger, chopped
1 stalk lemongrass, chopped

Methods
Prepare spice paste by grinding all ingredients in a mortar with pestle or a food processor. Add a little oil to process.

Corn Rice (Nasi Jagung)

Ingredients
1-1/2 cup rice, washed
1-1/2 cup sweetcorn kernels

Method
1. Put rice and sweetcorn kernels in a pot with 3 cups of water and bring to boil.
2. Simmer rice and corn until water is absorbed. Reduce heat and cook till rice is dry and fluffy.

Yellow Rice (Nasi Kuning)

Getting tired of eating plain rice, try nasi kuning.

Ingredients
1 tablespoon vegetable oil
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/2 teaspoon ground cumin
2 cups rice, rinsed
2 cups coconut milk
1 cup water
curry leaves
1 cinnamon stick

Methods
1. Heat oil, add turmeric, coriander, cumin and rice, stir till rice is coated.
2. Add coconut milk, water, curry leaves and cinnamon stick and bring it to boil.
3. Reduce to low heat untill liquid is absorded. Transfer rice to steamer to steam till cook.

Pineapple and Rum Chicken Kebabs

A new recipe to add to BBQ list if you want something different and special.

Ingredients
500g Deboned Chicken drumstick
1/3 cup pineapple juice
3 tablespoons rum
1 tablespoon brown sugar
1 stalk lemongrass, finely chopped
1 tablespoon oil
1 red onion, cut into thin wedges
1-1/2 cup fresh or canned pineapple chunks

Method
1. Cut chicken into cubes. Place Chicken cubes into plastic bag for marinade.
2.Combine pineapple juice, rum, brown sugar, lemongrass and oil into the plastic bag and put it into refrigerator for 2 hours.
3.On Skewer, thread alternately chicken cube, onion and pineapple chunk. Grilled kebabs for about 10mins, turning and brushing occasionally with marinade.

CORN FRITTERS (PERKEDEL JAGUNG)

Learn from my Indonesian maid for the following recipe. Ideal to serve as Appetizer or finger food in a party.

CORN FRITTERS (PERKEDEL JAGUNG)
Ingredients
1 can sweetcorn, drained
1 small red chillie, deseeded and finely chopped
4 small shallots, sliced
1 teaspoon ground coriander
pinch of salt
1 egg
1/4 cup rice floor
1 tablespoon plain flour
Vegetable oil for cooking

Method
1.Combine corn, chilli, shallots, coriander, salt, egg and flour. Leave to stand for 30minutes.
2.Heat oil in a wok or frying pan. Drop spoonfuls of mixture into oil and cook till golden.

REASONS TO SLEEP EARLY.

No doubt that all of us lead a hectic lifestyle, busy making end meet. But after reading this article, i think it makes sense to sleep and wake up early.
Evening 9 - 11pm - time for eliminating unnecessary / toxic chemicals (detoxification) from our antibody system. During this time duration, it should be spent by relaxing or listening to music. If one is still not in relax state, negative impact on health formed.
Evening 11pm - 1am - detoxification process in the liver. It should e done ideally in a deep sleep state.
Morning 1 - 3am - detoxification process in the gall and also ideally done in a deep sleep state.
Morning 3 - 5am - detoxification process in the lung. During this period, there will sometimes be severe cough for cough sufferer. Since the detox process had reached the respiratory tract, therefore there is no need to take cough medicine as it will interfere with toxin removal process.
Morning 5 - 7am - it detoxify in the colon and one should empty their bowel.
Morning 7-9am - Normally, you should be having your breakfast at this time. It is the best time for absorption of nutrients in the small intestine. Breakfast before 7.30am is very beneficial to those wanting to stay fit. For those who skip breakfast, kindly change their habits and have their breakfast before 10am. It is better to have breakfast late than no meal at all.
Hence, if we continue to sleep late and wake up late, it will disrupt the process of removal of unnecessary chemicals.

SO DO REMEMBER TO SLEEP EARLY IN ORDER TO STAY HEALTHY....

BEST TO DRINK WARM WATER AFTER MEAL

Received an email from my Hubby about DRINKING WARM WATER AFTER MEAL.

The Chinese and Japanese drink hot green tea with their meal and it is time we adopt their drinking habit while eating our meals.

It is nice to have a cup of cold drink after meal. But the cold water will solidify the oily stuff that we have just consumed. Eventually it slow down our digestion and if this sludge reacts with acid, it will break down and absorbed by intestine faster than solid food. Very soon, it lines the intestine and subsequently turn into fats that may lead to Cancer.

So remember, it is best to drink hot soup or warm water after meal.

MY FIRST BLOG








Hi, this is my first blog. I created it to share all my precious memories that i have encountered.


Just back from holiday @ Malaysia with my boys. It is quite an enjoyable trip except that I accidentally drop my digital camera and broke the LCD screen on the last day of holiday. .


Feel sad cos can't capture lots of precious moments. Already send for repair and hope to collect it back soon
